Eggnog Muffins2 cups all-purpose flour
1/2 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup eggnog
1/4 cup water
1/3 cup butter, melted
1 egg, beaten
1 teaspoon vanilla extract
1/2 teaspoon nutmeg Preheat oven to 400 degrees F. Combine flour, sugar, baking powder and salt in a large mixing bowl. In another bowl, combine remaining ingredients. Add liquid to dry ingredients and mix until just moistened. Pour batter in lined or greased muffin cups and bake for 20 minutes. Makes 12 large muffins.
